Roast Goose, or Shao Er in Chinese, a variation on roast duck, is one of the traditional 'hot' dishes of Guangzhou. This delicious dish is notable for its crispy skin and rich and tasty meat.

Recipe:

The best geese to roast are small to medium-sized black geese from Qingyuan, an area north of Guangzhou. The wings, feet and entrails are removed, the body is inflated with air and seasoned with a stuffing of five fragrant seasonings placed in the stomach and then sealed. The goose is then boiled in water for a short time then quickly cooled with cold water, basted with sugar juice and left to hand to air-dry. It is then roasted by being hung and rotated slowly on a rotisserie, in an oven or above an open flame.

The goose can be served in pieces, with additional seasonings added for flavour.

Many shops in the city sell roast goose. Well known outlets included Yuji in Changdi Lu, near Haizhu District and Shenjing on Changzhou Island, Huangpu District.
